These chicken meatballs are soft and flavorful, the sauce is cozy and rich, and the green peas add a little sweetness and color that kids usually don’t mind at all. Served with rice or quinoa, it’s a complete, balanced meal that actually keeps everyone full.
This dish is a perfect example of what I always come back to in the kitchen: use real, minimally processed ingredients, and let them do the work. That’s the foundation.
Chicken Meatballs with Green Peas in Tomato Sauce
For the meatballs:
• 1 lb ground chicken
• 3 tbsp chickpea flour
(or replace with 1 egg + 3 tbsp breadcrumbs)
• 2 tbsp hummus (adds softness)
• 1/2 onion, finely chopped
• 1 carrot, grated
• 1/2 cup chopped fresh cilantro
• 1 tsp salt
• 1/2 tsp chili flakes
• 1/4 tsp turmeric
Mix everything well and form small round meatballs.
Now let's prepare the sauce:
Heat olive oil in a wide pan.
Sauté 1/2 chopped onion until soft, add 2 crushed garlic cloves, 1 tbsp paprika, salt and black pepper to taste.
Stir, then add:
• one 14 oz can crushed tomatoes
• 1/2 cup water
Bring to a gentle boil, add the meatballs, cover and cook for 15 minutes.
Add 1 bag frozen green peas, bring back to a simmer, cover and cook for about 30 minutes until tender.
Serve with simple white rice or quinoa.
