
Oven-baked chicken kebabs that are easy, healthy, and very Mediterranean. One bowl, simple ingredients, and no fuss. Exactly how I like to cook, especially on busy weeknights when I want real food without turning dinner into a project.
If you’re looking for a protein-forward meal that feels nourishing, comforting, and doable, this one checks all the boxes. No frying, no standing over the stove, and minimal cleanup. Just mix, bake and dinner is ready.
I usually serve these with a simple salad, warm pita and a spoon of tahini.
Ingredients
- 1 lb ground chicken
- 1/2 white onion, finely chopped
- 1/4 cup finely chopped fresh cilantro
- 1 tbsp tomato paste
- 1/2 tbsp sweet paprika
- 1/2 tsp ground cumin or chicken seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- Olive oil spray
Instructions
- Add all ingredients to a large bowl and mix well until fully combined.
- Line a baking sheet with parchment paper and lightly spray with olive oil.
- Press the chicken mixture evenly into the pan.
- Cut into kebab-sized portions.
- Spray the top lightly with olive oil.
- Bake at 350°F for about 30 minutes, until cooked through and lightly golden.
