A fresh delicious salad which can only be described as a burst of freshness to the senses.
In this salad the beets are raw - locking in all the vitamins and benefits that are mostly gone when cooking it.
What to take
4 large beets - peeled and grated
¾ cup chopped cilantro
10 fresh mint leaves - chopped
½ cup walnuts (if you want a lighter version you can skip the walnuts)
½ teaspoon grated ginger root
Juice from 1 Lemon
⅓ cup olive oil
1 tablespoon vinegar
½ teaspoon honey or brown sugar
Salt & pepper to taste
How to make
In a large bowl put the beets, herbs and walnuts.
Mix the dressing ingredients separately and add to the vegetables.
